I love tonkatsu!! I love katsu sandwiches. I love katsu curry. I love katsudon. I love chicken katsu. I love pork katsu. If I had another dog I would name him Tonkatsu.
For my husband’s birthday he was craving katsu for lunch so we headed to Tonkatsu Ginza Bairin at the IFC mall in Shanghai. I love my husband because he loves tonkatsu too.
Tonkatsu Ginza Bairin is a small casual restaurant chain with locations in Japan, Hong Kong, Singapore, Shanghai and Hawaii. It is most famous for their Kurobuta Tonkatsu which is made from tender premium pork loin with finer fat marbling and shorter muscle which results in tender but not greasy pork cutlet. The Kurobuta pork is coated with a batter made from homemade breadcrumbs before being deep fried in cottonseed transfat -free oil at the perfect temperature. They also offer their special homemade tonkatsu sauce.
At this location they offered the full menu along with a lunch menu with a special price. Although everything on the menu looked enticing we both decided to go with the original lunch set for 78 RMB ($12).
On each table there are 3 different sauces available to you: sesame dressing, wasabi dressing and tonkatsu dressing. I used the sesame dressing for the cabbage salad and the special tonkatsu dressing for the katsu. Some people like to drizzle the tonkatsu sauce over the pork but I prefer to dip so I don’t have to worry about the breading becoming soft during my meal.
The sets are served with pork miso soup, pickles, steamed rice, cabbage salad, chawanmushi and japanese barley tea.
The katsu was perfectly cooked. Crispy, juicy and perfectly seasoned. Shredded cabbage salad is what is traditionally served with tonkatsu and is a perfect accompaniment as a side or to eat along with each bite. In many tonkatsu specialty restaurants you can ask for extra cabbage salad if you want more as you can at this location.
I definitely recommend this place if you are in Shanghai and are looking for a tonkatsu fix.
